The 2-day event "KANPAI NIGHT," where 4 historic sake breweries gathered to showcase a luxurious selection of 14 different Japanese sakes, was successfully held at MOSS Singapore.
For this special occasion, the chef from MOSS okinawa traveled to Singapore to collaborate with the local team. Together, they crafted a masterful course menu packed with Japanese delicacies, featuring matsutake mushrooms, Ise spiny lobster, shiokara (salted fish guts), aosa seaweed, miso from Minami-Aizu, temari sushi, and Gunma Wagyu sukiyaki. The meal concluded with a signature dessert created in homage to the MOSS (kokedama) terrarium.
Guided by explanations from a Master Sake Sommelier, guests deeply experienced the flavors, aromas, and the passionate stories of the brewers behind each pairing with all 5 senses.
Over these 2 nights, the lively conversations shared between the breweries, guests, and sommeliers allowed everyone to directly feel the charm of Minami-Aizu. Heartfelt gratitude goes out to the organizers for this wonderful collaboration.

A premium Minami-Aizu sake event will be held at MOSS CROSS TOKYO Singapore, located on South Bridge Road—a street where the history and culture of central Singapore intersect.
Named "KANPAI NIGHT," this exclusive 2-day event offers a rare opportunity to savor highly acclaimed sakes that are seldom found in Singapore, paired perfectly with a special course menu crafted specifically for this feast.
Minami-Aizu, located in the mountainous, nature-rich southern region of Fukushima Prefecture, is home to boutique yet historic breweries dating back to the Edo period. Utilizing blessed natural spring water and local Fukushima rice, their sakes are highly praised both locally and nationwide.
This event features more than 12 premium sakes from 4 distinguished Minami-Aizu breweries that boast gold-medal track records at national appraisals: Aizu Shuzo, Kokken Shuzo, Hanaizumi Shuzo, and Kaitou Otokoyama Shuzo.
Rich aromas, deep umami, and a beautiful lingering finish—. This limited 2-day event promises a blissful dining experience where the unique world of sake meets a delicate culinary marriage.
